Spicy Black Bean Salad for ADD Nutrition
Here's another great recipe to help maintain optimal nutrition to benefit your Attention Deficit Disorder. The beans are a good source of protein, complex carbohydrates, vitamins, minerals, and fiber. The tomatoes, onions, poblano pepper, lime, and cilantro add even more vitamins, minerals, and fiber. Olive oil slows the absorption of the carbohydrate and makes the fat soluble vitamins available for the body's use. I used the La Preferida brand of beans, since they are a high quality product. The garbanzos have a wonderful creamy texture, rather than the grainy and mealy textures that happen so often with canned garbanzos.

In addition to the nutritional value of Spicy Black Bean Salad, this is a versatile food that can be used several different ways. Versatility allows you to have easier meal planning.

Ideas for using Spicy Black Bean Salad

*Use it as a side dish for a tasty sandwich.
*Add it to the top of a green salad.
*Gently heat the Spicy Black Bean Salad and stir it into an equal amount of cooked rice or quinoa. Top the dish with grated cheese. This improves the protein by pairing the beans with grain and cheese.
*Wrap the bean salad and some grated cheese into a low-carb flour tortilla. Roll it up like a burrito. Place the burrito into a microwave safe dish. Cover it with salsa or enchilada sauce. Sprinkle cheese onto the sauce. Cover the dish and microwave it for 2-3 minutes. Let the dish stand for 5-10 minutes before serving. If you want to make enough of these burritos for a family, make the burritos and put them into a greased baking dish. Pour salsa or enchilada sauce over all of the burritos. Sprinkle with cheese, and then cover the baking dish. Cook in the oven at 350 degrees F. until they are heated through and the cheese is bubbly. This takes 30-45 minutes, depending on how many burritos that you made. Let the dish stand for 5 minutes before serving. You can garnish these burritos with chopped lettuce and tomatoes or sour cream.


Spicy Black Bean Salad

Ingredients:

1 cup chopped spring onions-white and green parts
1/4 cup finely chopped poblano pepper
1/2 cup chopped cilantro
1 pound chopped Roma tomatoes
1 - 15 ounce can of garbanzo beans-drained (I used La Preferida brand.)
1 - 30 ounce can of black beans-drained and rinsed (I used La Preferida brand.)
1/4 cup freshly squeezed lime juice (Please used freshly squeezed; bottled is not the same!)
1/2 teaspoon seasoned salt (I used Tony Chachere's Creole seasoning.)
1/2 teaspoon garlic salt
1/4 teaspoon freshly ground peppers
1/4 cup olive oil (I used Kirkland extra virgin olive oil.)
Hot sauce to taste (Optional, if you like it really spicy. I didn't use any.)

Method:

I used my Kitchen Aid food processor for all of my chopping. I used the chopping blade and pulse function, and I just pulse-chopped until each individual ingredient looked right. I chopped in the order given in the ingredients: onions, poblano pepper, cilantro, and Roma Tomatoes. After each ingredient, I transferred it to the mixing bowl. After the onions, peppers, cilantro, and tomatoes were in the bowl, I added the small can of drained garbanzos. Then, I rinsed the black beans in a colander and added them to the bowl. Then, I gave the ingredients a gentle stir to mix them.

Into a measuring cup for liquids, I squeezed my 1/4 cup of lime juice. This took 2 limes. I added the Tony Chachere's Creole seasoning, garlic salt, and pepper. Add the hot sauce, if desired. Stir this to mix it. Then, add olive oil up to the 1/2 cup line. Stir the dressing vigorously, then pour evenly over the bean salad mixture. Stir gently to combine the salad and dressing. Put the salad in a covered container and refrigerate it. It is best to let this salad stand in the refrigerator for an hour before serving to let the flavors mingle.
