Grilled Corn and Avocado Salad Recipe
When local fresh corn shows up at farmer’s markets and grocery stores, it not only signals nice weather, but a season of luscious fresh vegetables and fruits. Grilled corn on the cob is one of the best things out there, and not only can it be eaten right off the grill, but also cut off the cobs and put into salads. This Grilled Corn and Avocado Salad has a luscious honey lime vinaigrette, and is perfect for backyard get togethers or pot lucks. It can be made up to two days ahead.

If you don’t want to heat the outdoor grill, I’ve found that a Ninja Foodie Grill® does an excellent job of roasting corn. In fact, I prefer it, since I can watch it closer than my gas grill. If you have one, do try it for roasting corn. You’ll be hooked.

6 ears fresh corn on the cob

1 large red bell pepper, cored and diced
1 cup fresh jalapeno peppers, diced, or for a milder version, use half green bell pepper
1/2 cup finely chopped green onions
2 cups diced jicama
1 15 oz. can black beans, rinsed and drained
3 avocados, pitted, peeled, and diced

Dressing:
1/4 cup olive oil
1/4 cup freshly squeezed lime juice
2 tablespoons honey
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

1/3 cup fresh cilantro, or parsley, chopped

  1. Preheat grill to medium-high heat; brush the grill grates with a little vegetable oil.
  2. Shuck the corn, wash thoroughly, and place on the grill.
  3. Shut the lid and let the corn cook 8-10 minutes or until lightly browned and tender.
  4. Let the corn cool, cut the kernels off the cob, and transfer them to a large serving bowl.
  5. Mix in the red bell peppers, jalapeno and/or green bell peppers, green onions, jicama, black beans, and avocados.
  6. Place the dressing ingredients in a magicBullet or blender; blend until smooth, and pour over the corn and avocado mixture.
  7. Stir in the cilantro or parsley. Serve immediately, or cover and chill for up to 2 days.
